Why Local Restaurants Order From TC Greens

Microgreens are delicate. They lose their crunch and color fast once they’re cut, which is a problem for any kitchen buying from a distributor that stores produce for days before it ships. We built our wholesale side around a simple idea: grow to order, so a restaurant’s microgreens are still in the tray until shortly before they’re delivered.

Grow to order, not stored to order

Most suppliers pull from standing inventory. We plant and harvest against what a restaurant actually needs for the week, which means the greens that show up in your kitchen were cut recently rather than pulled from a cold storage room. That matters for a few reasons:

  • Flavor and aroma hold up. Greens harvested hours before delivery keep more of their natural flavor than ones that have been sitting for days.
  • They look better on the plate. Fresh color and a crisp texture make a visible difference on a garnish or a salad.
  • They last longer in your kitchen. Because they arrive fresher, they have more usable life in your walk-in before they start to wilt.

Custom orders for your menu

Every kitchen has different needs, and we work directly with chefs rather than through a broker. If you want a specific variety for a seasonal dish, or a particular blend for something on the menu, tell us what you’re after and we’ll grow it. We can often accommodate requests around variety, quantity, and harvest timing that a larger distributor isn’t set up to handle. Visit our wholesale page to talk through what you need.

Same day delivery

We deliver locally, often the same day a batch is harvested. That means:

  • Your order spends less time in transit and more time actually usable in the kitchen.
  • You can order closer to when you need it instead of carrying extra inventory just in case.
  • You’re dealing with one local grower, not a long supply chain, so if something needs to change, it’s a phone call, not a ticket.

Consistency and variety

We run a controlled growing setup and check each batch before it ships, so what you get this week should taste and look like what you got last week. Beyond the basics, we grow a wide range of varieties, from spicy mustard and peppery radish to more delicate basil and sweet pea shoots, so you can rotate your menu without switching suppliers.

Sourcing locally also tends to mean a shorter trip from farm to kitchen and a direct relationship with the grower, which a lot of chefs and diners care about these days.
